Bekannt wurde der Schauspieler durch seine Rolle als warmherziger Koch Matthias „Matti“ Steininger in der SAT.1-Vorabendserie „Die Landarztpraxis“. Von der zweiten bis zur dritten Staffel spielte er die Rolle des Kochs und stand in der „Alten Post“ über 151 Folgen lang als Küchenprofi am Herd. Vor seiner Zeit als Koch bei „Die Landarztpraxis“ war Thorsten Hamer bereits in zahlreichen Film- und Fernsehproduktionen zu sehen. Er trat in erfolgreichen ZDF-Formaten wie „Notruf Hafenkante“ und „SOKO Wismar“ auf. Besonders beliebt war Thorsten Hamer auch für seine Darstellung als Heinz Erhardt. Er verkörperte den Komiker mit viel Liebe zum Detail.
